Fathers Day at Blackjack: Family Recipes

Father’s Day at Blackjack
Father’s Day is all about good food, family, and letting Dad put his feet up with a well-earned glass of wine. This year again, we’ve picked two of our favourite recipes for the family to make for us as we put our feet up. Pair them with a Blackjack wine, and you’ve got a Father’s Day feast to remember. 

Kens Stir fry

A quick, easy and healthy meal and nicely paird with a glass of Chortle’s Edge

Ingredients

1. Aromatics….a knob of ginger, julienned, 3 cloves of garlic, finely chopped, a small chilli if you like, 1 segmented onion

2. Protein……either pork fillet, beef, chicken or tofu …as much as you like, thinly sliced

3. Vegetables …two or three of what takes your fancy….celery, capsicum, bok choy, carrots, snow peas, broccolini, any leafy green.

4. Egg noodles

Method

Cook egg noodles as described on packet. Drain and set aside.

Cut up protein, and marinate in some soy sauce and sesame oil.

Add oil to a wok, or frypan, and when piping hot, quickly cook your two chosen vegetables, then onion segments, then ginger and garlic, and chilli if you like a bit of heat.

(most recipes suggest cooking the protein first, but I find this leaves residue in the pan which then can blacken the vegetables)

Remove vegetables, add more oil to the wok and cook half the protein, remove, then the other half.

Finally, combine all ingredients, and add a glug or two of oyster sauce.

Place egg noodles in bowls, top with the stir fry and garnish with spring onions.
Enjoy with a chortles.

Ians Spaghetti Carbonara

Ingredients:

· 3 to 4 slices of pancetta (can use guanciale) cut into 1cm pieces, or whatever size you prefer.

· One egg and half a cup of finely grated parmesan cheese gently whisked in a small bowl using a fork.

· 100gm of fine spaghetti pasta

Method

1. Cook the pasta in well salted boiling as per instructions on the packet.

2. In a frypan cook the pancetta until crisp (no need to add oil).

3. When pasta is ready use tongs to transfer to the frypan and mix and toss well so the pasta absorbs the pancetta oil.

4. Remove frypan from heat.

5. Add in the egg and cheese mixture and again toss and mix well. The heat from the pasta will cook the egg.

If necessary, add a tablespoon or two of the pasta water to achieve your preferred consistency. Note: Make sure the frypan has cooled a little before adding the egg. Too hot and you end up with the scrambled egg version.

6. Finished with a good grind of black pepper and extra grated parmesan cheese, and some chopped parsley, if desired.

Remember this is a recipe where you are only cooking for one so multiply if needed.

7. Switch the TV on, pour yourself a glass of Blackjack Cabernet Merlot and enjoy.
